Greek Pork Sandwiches
In this recipe I use Safflower mayo but Greek Yogurt is also very delicious. Although I do not recommend cooking with safflower oil, however Safflower mayonnaise uses expeller pressed safflower oil. Expeller pressed simply means that no heat used during pressing, and since the oil is used in such a way that no heat is applied, it would be okay to use occasionally. For non-pork eaters, this works with chicken as well.
Meat
2-pound pork boneless shoulder roast, trimmed of fat
1- 1 1/2 Tbsp (no added sugar) Greek seasoning
Cook in a slow cooker for 5-6 hours until pork is cooked and tender.
Sauce (recipe makes enough for 6 sandwiches or 12 pitas)
1c. safflower mayonnaise or Greek Yogurt
3 garlic cloves, chopped
Mix mayo and garlic and refrigerate until ready to use.
Additional ingredient ideas:
Cucumbers, sliced in thin slices
Tomatoes, sliced
Lettuce, shredded
Whole Grain buns or Ezekiel pitas
Assemble sandwiches by spreading the sauce inside the pitas and add tomatoes, cucumbers and meat.
