Healthy Burrito Bowl
This dish is perfect for Cinco de Mayo or whenever you have a craving for Mexican. So often we skip Mexican cuisine because it can be incredibly unhealthy, but with the right ingredients, we could eat it on a regular basis. If you have never tried substituting Greek yogurt for sour cream, you must give it a try—amazing!
Healthy Burrito Bowl
2 cups lettuce of choice
1 cup grape tomatoes
3 cups shredded or cubed chicken, cooked
3/4 cup corn
1 1/2 cup black beans, canned, drained
1 cup brown rice, cooked (optional)
1 tsp paprika
1/2 tsp. cumin
1/4 tsp. cayenne pepper
1/4 tsp. pepper
Cook the rice according to package directions. Mix in paprika, cumin, cayenne, and pepper when the rice has about 5 minutes left. Set aside.
Layer bowl with rice, lettuce, chicken, corn, and black beans. Extra delicious topped with jalapenos, healthy avocados, Greek yogurt, and/or Creamy Avocado Ranch Dressing
