Healthy Chocolate Bites
I love popping a yummy candy in my mouth so I’m always trying to make a guilt-free treat!! So, here is my latest “candy” recipe. I used dates to sweeten these up and their stickiness also helps hold the candies together. You can store in the fridge if you do it without the chocolate option, but if you do the chocolate tips, freeze these little babies. You can easily eat them frozen.
Healthy Chocolate Bites
1 c. raw almonds
1/3 c. creamy almond or peanut butter
1/2 c. unsweetened carab chips
1/4 c. ground flaxseed (aka flaxmeal)
1/4 c. unsweetened coconut
3/4 c. dates (make sure they are pitted)
1/4 c. coconut oil
Melt coconut oil in saucepan on low heat until liquid. While coconut oil is melting, put remaining ingredients into a food processor and blend well. Add coconut oil and blend again. It will be a thick. Place in ice cube tray and place in refrigerator or freezer. Pop out and store in a airtight container (fridge or freezer).
Option – I did both ways and show them both in the photo.
Make your favorite chocolate recipe – You can melt 1/4 c. coconut oil with 1 tsp. unsweetened carab powder or unsweetened chocolate. I add 1/2 tsp. organic vanilla and a few drops of liquid stevia. Place a small amount in the ice cube tray. Freeze. Then place the above mixture over the frozen chocolate. Pack firm and return to freezer. Store frozen.
