Homemade Cajun Gumbo

Looking for a great crock-pot dinner? This recipe is delicious and packed with goodies. The recipe calls for rice, but it’s just as good without if you want to omit it. If you add it in, make sure and do a brown or wild rice instead of white. If you don’t have the Cajun spice in your collection, you will want to. Add it to just about every meal to give it an extra kick and so tasty!

Here’s our favorite crock making it extra easy to serve a hot meal when you get home from a busy day.

Homemade Cajun Gumbo

1lb. chicken breast, cut into bite-size pieces
1lb. chicken sausage, cut into bite-size pieces
1lb. shrimp, raw and shells removed
1 onion, diced
1 green or red pepper, diced
1 jalapeno or other hot pepper, diced
3 stalks celery, diced
1 (28 oz) can diced tomatoes
3 tsp. garlic, minced
2 cups chicken broth
1 Tbsp. Cajun spice
1 tsp. thyme
1 tsp. oregano
1 1/3 C. brown rice, optional

Combine all ingredients in the slow cooker, except for the shrimp and the rice. Cook on low for 6 – 7 hours, stirring occasionally. In last hour of cooking, sprinkle with sea salt the shrimp lightly, and then add them to the crockpot.
