Homemade Healthy Breakfast Egg Muffins

These are easy, healthy and delicious! They include ingredients to help you not only lose weight but boost your immune system to help fight viruses. Perfect for a fun family breakfast. They can be stored in the fridge for up to a week or frozen to enjoy a quick breakfast later!
1 lb. ground sausage
2 cloves garlic, minced
1-2 tsp coconut oil
dash of crushed red pepper
1/2 red pepper, chopped
9-12 eggs
2-3 stalks of green onion, chopped
1/2 tsp sea salt
1/2 tsp. ground pepper
Heat a skillet over medium heat with 1-2 tsp coconut oil to the skillet. Add the garlic and stir until fragrant (1-2 minutes). Add sausage and cook until fully browned. Add the peppers and cook another minute, then remove from heat and set aside.
In a bowl, whisk together the eggs and seasonings. Then, pour the entire sausage mixture into the eggs and combine them. Stir in the green onions.
Fill muffin cups 3/4 of the way to the top (they’ll rise a bit) and bake at 400 degrees in the preheated oven about 15 minutes, or until the eggs are set and the muffins just begin to brown.
