This simple low carb dish is perfect for breakfast or dinner. We started with a base recipe but it’s extra yummy when you add in more ingredients. Sausage, onion, mushrooms, spinach—just to name a few.

An easy make-ahead meal!

Keto Breakfast Pie

  • 12 eggs scrambled
  • 6 strips of bacon, cooked and chopped
  • One bell pepper, chopped and sautéed until just tender in bacon grease (drain on a paper towel)
  • 1/4-1/2 C shredded cheddar

Preheat oven to 400.

Mix all ingredients in a bowl and stir until well blended. Pour the mixture into a very well buttered/oiled pie pan, or deep casserole pan (8×8-9×9).

Bake for 15-20 min or until eggs are set in the middle.

Let stand for 5-8 minutes (make sure it’s not jiggly) then cut.

Serves 4-6.
