Dehydrating foods keeps them raw with all nutrients and enzymes intact. It is an excellent way to preserve fruits, vegetables and meats. Dehydrated fruits do not contain more sugar. A dehydrated apple still contains the same amount of sugar as a whole apple, only now the apple has no water in it. However, people have a tendency to eat larger amounts of dehydrated fruits so their intake of fructose is higher.
Most people don’t eat 5 whole apples at a time, but they do have a tendency to eat enough dehydrated apples that would be equal to 5 apples. which means they would be getting the amount of sugar in 5 apples all at once.
