Pumpkin Spice No-Bake Granola
- 2 cups rolled oats
- 1 tablespoon + 1 teaspoon pumpkin pie spice
- 1 cup toasted pepitas
- 1 cup pecans, chopped
- 1⁄2 cup almonds, chopped or sliced
- 1/2 cup raisins
- 2/3 cup unsweetened coconut
- 2/3 cup coconut oil
- 1 teaspoon liquid stevia (vanilla or pumpkin flavor)
- 1⁄2 cup honey or coconut nectar
In a large bowl combine all ingredients. Mix well. Enjoy immediately. Store in an airtight container in the refrigerator.
