Pumpkin Spice No-Bake Granola

  • 2 cups rolled oats
  • 1 tablespoon + 1 teaspoon pumpkin pie spice
  • 1 cup toasted pepitas
  • 1 cup pecans, chopped
  • 1⁄2 cup almonds, chopped or sliced
  • 1/2 cup raisins
  • 2/3 cup unsweetened coconut
  • 2/3 cup coconut oil
  • 1 teaspoon liquid stevia (vanilla or pumpkin flavor)
  • 1⁄2 cup honey or coconut nectar

In a large bowl combine all ingredients. Mix well. Enjoy immediately.  Store in an airtight container in the refrigerator.
