Red Pepper & Quinoa Hummus

Red peppers have been known to have twice as much Vitamin C as citrus! Vitamin C increases the production of antibodies and white blood cells, which help fight against infection. Add red peppers to your diet and boost up your immune system.
Red Pepper & Quinoa Hummus
1⁄2 cup cilantro, chopped
1⁄4 cup cooked quinoa
1⁄2 cup raw walnuts
1⁄2 cup roasted red peppers
Juice of 1 lemon
1/3 cup tahini
3-4 cloves garlic, minced
1 (14 oz) can chickpeas
1 tsp. sea salt
1 tsp freshly ground pepper
Combine cilantro, cooked quinoa, roasted red peppers and lemon in a food processor or blender. Process until the mixture is well combined. Add tahini, garlic, chick peas, salt and pepper. Blend until smooth.
