Super side dish that is delicious and healthy!! 

Simple Roasted Potatoes

  • Small red potatoes, (or mix) cut into halves/quarters
  • 1/4 cup Olive oil
  • 1 teaspoon Italian seasoning
  • 1 1/4 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp pepper
  • 1 tsp sea salt

Preheat the oven to 450 degrees. Line a rimmed baking sheet with parchment paper or a baking mat. You can also do in a seasoned cast-iron skillet.

Peel and dice the potatoes and place them inside a large bowl. Add oil and mix until the potatoes are well coated. Add seasonings and blend with potatoes. Spread the seasoned potatoes on the baking sheet.

Bake at 450 degrees for 35 minutes, stirring half-way through. Once the potatoes are tender inside and crispy outside, they are done.
