Slow Cooker Chicken
3 chicken breasts, boneless and skinless
1 cup salsa (no added sugar)
1 can diced tomatoes (low-sodium)
2 Tbsp. LCM Three Amigos Seasoning
1 c. onions, chopped
1/2 c. celery, chopped
1/2 c. corn
1/2 c. water
1/8 c. Greek Yogurt

Place the chicken in a slow cooker. Sprinkle the taco seasoning over the meat then layer the vegetables and salsa on top. Pour a half cup water over the mixture, set on low and cook for 6-8 hours. Shred up the chicken with two forks then stir in the Greek yogurt. Serve with vegetables on the side or wrapped in a tortilla shell.
