Stuffed Peppers make for a delicious dinner any night of the week! They are filling, yummy and they can be prepared ahead of time.
5 whole peppers
1/2 lb ground turkey
1 can diced tomatoes with peppers (such as Rotel)
1/2 tsp. ground pepper
1/4 tsp. cayenne
1 tsp. paprika
1/2 tsp. chili powder
1 tsp. garlic
1/2 tsp. cumin
Optional toppings ideas: green onions, jalapenos, pine nuts, Cotija cheese
Cook the ground turkey in a pan over medium heat. Finely chop one pepper. Cut the remaining peppers in halves and clean out the middle of each one.
Once the turkey is cooked, add tomatoes, seasonings and cook on low for 5 more minutes. Stuff each pepper half with the turkey mixture.
Bake for 20 minutes (or until peppers are nearly soft).Serve hot and enjoy!
