Spinach Chili

1lb lean ground beef or turkey
1/2 c. onion, chopped
1 tsp. chili powder
2 tsp. Little Choices Matter Three Amigos Blend
1/2 tsp. cumin
1 c. chopped tomato
1 green, red or yellow pepper, chopped (or mixture of peppers)
Dash of sea salt and pepper
1 – 1/2 c.water or broth
3-4 cups raw spinach
1 can of beans – black, pinto, kidney, etc.

Heat a medium sized pan to medium-high heat. Add beef and onion and cook until beef is cooked. Add remaining ingredients except spinach to the pan and bring to a boil. Turn heat down to low, cover and let simmer for ten minutes. Add spinach and let cook for 10 minutes more to cook spinach and allow flavors to combine.

    If I leave out the chili beans and serve on top of the spinach could I eat this in phase 2?
