Three Amigos Corn Chips and Salsa
2 large cans of organic no sugar added whole tomatoes drained (or diced tomatoes)
1 whole jalapeno
1 green bell pepper
1 red onion
One handful of cilantro
1/4 – 1/2 tsp. Sea salt
1/4 tsp. pepper
Cumin, to taste
Minced garlic to taste
Blend well or pulse in a food processor for a smoother consistency.

Brush tortillas with coconut oil. Sprinkle with Three Amigos Mexican Spice. Cut tortillas into triangles or bake whole and break, place on a cookie sheet and sprinkle with sea salt. Bake at 350 for 6 minutes each side or until golden brown. Undercooked chips make chewy chips.
