Three Amigo’s Eggs with Avocado
A good breakfast to jump start your day, it is super healthy and tastes great! This one is packed with protein and healthy fats so it’s easy on your waistline yet filling.
1 T of Coconut oil or butter melted in a pan.
1 Small Zucchini
¼ c Small Red onion
¼ c Red pepper
3-4 Large Eggs
1/4 tsp LCM Three Amigos Mexican Spice Blend
1/4 Sliced Avocado
Saute veggies until tender. Scramble 3-4 whole eggs in a bowl with a little Coconut milk or milk and add to veggie mixture. Cook eggs until desired texture is reached.
Place on plate, sprinkle liberally with LCM’s Three Amigo’s Blend and add 1/4 of a sliced avocado.
Eat and enjoy knowing you will be satisfied for hours after eating this breakfast.
