Easy Keto Caprese Salad – Tomato Slices with Basil & Cheese

Keto Caprese Salad
- 4 LG. ripe Roma tomatoes, remove stems and sliced 1/2 inch thick
- Fresh mozzarella cheese, sliced
- Salt and freshly ground pepper
- 2 tsp. fresh basil, minced
- Extra Virgin Olive Oil
- Red wine vinegar
Place layer of tomato slices on a platter and top with onion and cover with cheese. Season with salt and pepper and basil. Drizzle oil and vinegar over the tomatoes. Continue layering ingredients until all are used.
Optional toppings
- Bacon, cooked and crumbled
- Avocado slices
- Red Onion
- Olives
- Feta cheese
- Pesto sauce
Refrigerate until well chilled then serve.
