Veggie Omelet

Here’s a great tip to make your  “regular” breakfast into a “signature” one! Try our Signature Blend Seasoning and you’ll taste some great added flavor to any omelet!

This is a great way to get in some healthy vegetables! Studies show that eating a healthy breakfast aids in weight loss. Experts believe eating breakfast keeps your metabolism running because skipping meals causes the body to kick into starvation mode. So, have a filling and healthy breakfast every day! If time is an issue, cut all the veggies the night before, or even on the weekend and have them ready to go!

Veggie Omelet

2 eggs
1 Tbsp. coconut oil
1/8 c. coconut milk
1/8 tsp. Signature Blend Seasoning
1/4 cup. green onions, chopped
1 garlic clove, minced
1 cup chopped veggies – green/red/yellow/orange pepper, mushrooms, zucchini, etc.
1 handful spinach

In a medium skillet, melt coconut oil over medium heat. Saute veggies until tender. Beat eggs, milk and spices with a wire whisk until fluffy. Pour over sautéed veggies along with green onion and spinach and cook until done. Top with cheese or salsa if desired.
