Mexican Chicken Stir Fry
It can be hard to find quick, easy and delicious meals you can whip up in a few minutes that will keep you full, satisfied, and keep you going on the healthy track. It can be even harder to enjoy Mexican cuisine which is my favorite food group 😉 So, I came up with this dish and it’s been a hit with my family! Enjoy!
Mexican Chicken Stir Fry
1 tsp coconut or sesame oil
1 lbs chicken, diced into bite-sized pieces
2 tbsp garlic, diced
1/2 onion, diced
2 bell peppers, sliced
1 1/2 cups broccoli florets
1 – 2 tsp. Three Amigos Mexican Seasoning
2 Tbsp. water
1/2 tsp cayenne pepper or chili powder, optional
Heat a large pan over medium heat. Add oil and heat until melted. Add diced chicken, stir occasionally until lightly browned on all sides. Add onions and let cook with chicken until translucent, stirring occasionally to prevent sticking. Add garlic, peppers, and broccoli and continue to cook until veggies are slightly browned and softened, about 10 minutes. Add seasonings and water and blend to coat the stir fry with the seasonings. Cook until water is completely absorbed.
Serve with a salad or over rice. Can also sprinkle with sesame seeds.
