No Bake Chocolate Peanut Butter Cookies

No bake chocolate cookies were a family favorite when I was raising my family, but I used a lot of margarine, white and brown sugar, and peanut butter loaded with additives. (Because back in the 90’s choosy moms had to choose JIF)

These oat cookies are amazingly easy and delicious but much healthier because they have no additives or added sugar!

No Bake Chocolate Peanut Butter Cookies

2/3 cup natural peanut butter
1/2 cup organic coconut oil
1/2 cup raw honey
3 cups oats

1/3 cup unsweetened cocoa powder
8-10 drops Vanilla Stevia (or to taste)
4-6 drops Chocolate Stevia (or to taste)
1/4 tsp. Himalayan Pink Salt

In a medium saucepan over medium-low heat, combine peanut butter, coconut oil, and honey and heat until everything blends together smoothly. Stir in oats, cocoa powder, stevia, and salt and mix well.

Use a spoon to drop cookies down onto parchment-lined baking sheets, then place in freezer for at least 15 minutes to set. Store in an airtight container either in the fridge or freezer.
