Need a quick and easy dinner idea? This recipe is super easy and adjustable to fit your diet.
It’s just a few ingredients – rice (optional) chicken, salsa, black beans, and (organic) corn.
I start with this simple crockpot chicken recipe but you could use any cooked chicken. This recipe is incredibly moist so it works well for this recipe. I’ve also used chicken thighs which is very moist and yummy.
While I use our homemade Pico de Gallo Salsa, you could use a store-bought variety. (No added sugars)
- 2 cups salsa
- 11 cup black beans, drained
- 1 cup organic corn
Cook your favorite rice according to the direction on the package. While the rice is cooking, place the salsa, beans, and corn in a small saucepan over medium-low heat until heated through. Place rice on a plate then top with chicken pieces and salsa.
