Healthy Recipe: Baked Chicken Taquitos
Baked Chicken Taquitos
Olive, Avocado or MCT oil
1 chicken breast, cooked and shredded
1/2 can black beans, drained and rinsed
1/2 cup Cotija cheese
1/4 cup salsa
1/4 plain organic or Greek yogurt
3 tablespoons Homemade Taco Seasoning or Three Amigos Seasoning
1/4 tsp sea salt
Combine all ingredients for filling. Lay the tortilla out and spoon out about 2 tablespoons of the mixture onto the shell. Spread the mixture out on the tortilla and then roll up and place on a baking sheet.
Once all of the tortillas are filled, spray (or brush) with oil.
Bake at 400F for 12-15 minutes then flip and make another 12-15 minutes or until crisp and golden brown.
