One of my favorite meal prep dishes is this Mexican Turkey. I often double the recipe and enjoy it over salads while my husband enjoys it in his burritos or tacos. We’ve also done burrito bowls over quinoa adding organic sour cream and avocado. YUM! ?

To avoid unhealthy additives in processed mixes, I often have a jar of homemade taco mix in my pantry and I add a few tablespoons to the mixture and taste/adjust after it cooks. It’s also very handy to have Three Amigos Blend and as as desired.

One-Pot Mexican Turkey

  • 1 lb Turkey, cooked
  • 1/2 onion, slightly sauteed
  • 1 cup black beans
  • 1 cup organic corn
  • 1 tomato, chopped
  • 1 cup quinoa, cooked
  • 1 can green chilis
  • 1 cup salsa

Seasoning

  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon paprika

Mix all ingredients and heat. Freeze or refrigerate to enjoy for many meals to come!
