Simple 1-Pan Chicken Mexican Fiesta
Fajitas are a classic Mexican recipe, but what would happen if you threw in a few extra ingredients? I can tell you—You’d have a fiesta!!
It’s super simple: Juicy chicken is seasoned, seared and cooked to perfection, then tossed with all the great fiesta ingredients. It’s a healthy one-pan skillet recipe you’ll love!
You can wrap it in a tortilla shell or make a quesadilla! Add a little cheese, guacamole and/or yogurt (great sour cream substitute). Serve it with a side salad or chips. Check out the recipes below for extra flavor and options!
This fiesta is an quick, easy and flavorful meal any time of the week!
1 Pan Chicken Mexican Fiesta
- 1-3 Tbsp extra virgin olive oil, divided
- 2 boneless skinless chicken breasts, cut into strips
- 2-3 tsp Three Amigos Seasoning (or other healthy taco seasonings – see below for homemade)
- Dash of Sea salt & pepper
- 2 bell peppers in assorted colors, deseeded and sliced
- 1/2 red onion, sliced
- 1/2 can black beans, drained
- 1/2 cup organic corn
Add some oil to a fry pan on medium-low. Add the chicken and sprinkle the seasonings over the top. Saute them until the chicken is almost done. Remove the chicken and set aside.
Optional step: Place a little oil in the pan and add the corn. Fry it until the corn is nicely roasted, a little brown. Remove and set aside.
Add your sliced onions and peppers to the pan. Drizzle the olive oil over the peppers and onions and saute for about 5 minutes, stirring often, until the peppers are done to your likeness.
Add the chicken, corn and black beans and saute until heated through, stirring often.
